Intense ruby red color. Specied hints of black pepper
and vvanilla, elegant fragrances of flowers such
as violents and red roses, wild cherries under spirit,
mirth, vanilla and barries. Full-bodied, persistent,
with balanced acidity and a velvety and buttery
finish on the palate. Intense aroma of cherries.
Food pairing and serving
To be served at 18° C in glasses for great red
wines. Ideal with game, particularly if cooked in
vinegar with sugar.
Vinification
Vintage of Gaglioppo at the end of October with
the selection of the best grapes. Noble mould sticks
to some grapes in this period. A light pressing
carries out a must containing a sugar density of
25-28%, followed by slow thermally-controlled fermentation.
Malolactic fermentation naturally takes place. After
natural clarification, the wine is fined in steel
tanks and in bottle.
